This coffee comes from the Chiroso de San Carlos Project, a small collective of ten producers farming in Urrao, Antioquia, one of Colombia’s highest-elevation coffee regions. Coffee here is grown at approximately 1,900 meters above sea level, where cooler temperatures slow cherry development and increase sugar density.
The project is led by producer Carmen Montoya, whose work focuses on varietal expression and controlled fermentation. Her approach emphasizes transparency, consistency, and process discipline, allowing the unique characteristics of the Chiroso variety to remain intact from harvest through roasting.
Washed · Oxygen-free fermentation
The coffee is hand-harvested at peak ripeness, then sorted before undergoing a 12-hour pre-fermentation to enhance natural sweetness.
After depulping, the coffee ferments for 36 hours in oxygen-free tanks, a method that allows fermentation to remain stable and clean while preserving acidity and structure. The coffee is then sun-dried for 12–16 days, followed by a 30-day resting period in sealed bags to stabilize moisture content before export and roasting.
This process results in a cup that is balanced, expressive, and precise rather than overly processed.
