  • Acidic Structure: Crisp Green Apple and Tart Nectarine.
  • The Finish: A lingering, silk-like mouthfeel with a refined Honey sweetness.

Mirroring Timeline’s "Clinically Proven" section, this validates the quality through technical detail.

Process: 48-Hour Controlled Anaerobic FermentationMicro-Climate: High-altitude San Carlos (1,900m+)The Science: To unlock the Chiroso’s potential, Carmen Montoya utilizes a prolonged cherry fermentation phase. This biological "stress test" allows the sugars to break down slowly, developing the complex lactic acidity and deep floral notes that define the Chiroso de San Carlos Project. Every bean is hand-sorted to a 98% uniformity standard before hitting our roaster.
